From French mayonnaise, named after the city Mahón whence the recipe was brought back to France.

  • GenAm IPA: /ˈmæneɪz/ pronunciation is because of æ-tensing. In many cases, the /e(ɪ)ə/ vowel hasn't actually flattened, but æ-tensing has caused many /æ/ vowels (including in mayonnaise) to tense to /eə/ or a similar vowel. Sometimes this vowel is pronounced as a true [æ] anyway, but it is because speakers associate the -ayo- in mayonnaise as being a /æ/ phoneme due to allophony. See also graham, where æ-tensing has a similar effect.
